Watermelon Mint Feta Salad
I have made this salad FOUR times in the past two weeks! The combination of the flavors of the lemon, onion, mint, watermelon, feta cheese, olive oil, and salt & pepper offers a MOUTH FULL of an euphoric taste that leaves you drooling for more. This salad is simple to make and offers an array of health benefits which I list at the end of this post.
Watermelon Mint Feta Salas Recipe
Ingredients
3 tablespoons of Olive Oil
2 tablespoons of fresh Lemon Juice
1 teaspoon of Kosher Salt
1/2 teaspoon of Pepper
4 pound Watermelon cut into cubes, approx. 4 cups
1 cup of Feta Cheese
1/2 of a small Sweet Onion
1 cup of coarsely chopped Mint Leaf
Preparation
In large bowl whisk together olive oil, lemon juice, salt and pepper. Add watermelon, feta, onion and mint. Toss gently, chill and serve! That is it! DELICIOUS!!!

Raw onions encourages the production of good cholesterol, assists in regulating blood sugar, and improves the working of vitamin C in your body. The quercetin in onions is known to assist in preventing cancer and consumes free radicals reducing your risk of gastric ulcers. Some of the enzymes found in fresh mint leaf is known to help fight cancer cells, mint also aids in digestion. Feta cheese is rich in calcium. Olive oil is healthy fat good for your brain health, improves your good cholesterol and protects against cancer. Lemon is a good source of vitamin C and aids in digestion. Many health benefits and rich in nutrients, can’t beat that!
