Paleo Coconut Chicken Mint Avocado Wraps
Seriously, I mean seriously, this is an amazing snack or lunch! So fast to make, which I love, and the flavors are a major crowd pleaser! The mint leaves, paleo mayo, avocado, meat which I used chicken breast in this recipe but you can use turkey or even bacon, along with a splash of himalayan salt wrapped up in the goodness of these AMAZING Coconut Paleo Wraps are so good! REALLY! Just ask any friend or family that have come over and I serve these, they literally eat me out of house and home of all my supplies to make these because they want at least 3 plus of these wraps each.. What is so great about this meal, is it is fast to make which makes an easy lunch or snack! I am warning you on these YOU WILL GET ADDICTED! You can buy the Paleo Coconut Wraps and Primal Kitchen Mayo made with avocado oil at Whole Foods or Amazon, I buy them in both places. Applegate is a great brand and prides themselves on quality meats without all the junk. You can find Applegate meat products at Ralphs, Stater Brothers and Whole Foods.

- 2 Paleo Coconut Wraps
- 1 tablespoon of Primal Kitchen Paleo Mayo
- ½ Avocado
- 1.5 slices of Applegate Chicken Breast (you can use a hormone, no nitrate turkey breast or bacon)
- ½ teaspoon of Himalayan Pink Salt
- 1 handful of fresh mint leaves
- Lay flat a paleo wrap
- Spread mayo down center
- Put avocado slices down center
- Lay meat over
- Then lay mint over
- Splash with Himalayan Pink Salt
- Wrap up
- Repeat
- Enjoy!
