Serves: 24
Ingredients
- 12 dates, pitted
- 3½ cups of nuts (walnuts, macadamia, pecans are all good choices either of them or a combo)
- 3 tablespoons of coconut oil
- 1 cup of blueberries (fresh or frozen)
- 1 cup of shredded coconut
Instructions
- In food processor (I LOVE the Cuisinart Food Processor), blend dates until they are pasty into a clump, about 55 seconds.
- Add nuts and blend until finely chopped, about 50 seconds.
- While the blade is still running add the coconut oil. The paste should be nice and creamy now, like dough.
- Scoop out paste and put into a large bowl, stir in ½ cup of shredded coconut, then fold in the blueberries. Roll dough into balls and line up on a plate. Take another plate and spread out the rest of the shredded coconut and roll the balls over the coconut until covered. Pop them in frig to keep cool and to harden them up a bit.
